Can do this in the crock pot or on the stove top. Plenty of zip and lots of nutrition. Omit the chicken for vegetarian option.

Recipe Ingredients for Crock Pot Tortilla Soup

16 oz Chicken, Breast, Meat Only
15 oz Diced Tomatoes
14 oz Medium Green Chile Enchilada Sauce
8 oz Green Chilies
30 oz Black Beans
1 medium (2-1/2" dia) Onions
6 cloves Garlic
2 cup (8 fl oz) Water
15 oz Soup, Chicken Broth
2 tsp Cumin
2 tsp Chili Powder
2 tsp Salt, Table
2 tsp Pepper, Black
15 oz Corn, Sweet, Yellow

Recipe Directions for Crock Pot Tortilla Soup

  1. Take boneless, skinless chicken breasts and bake at 350 degrees until done (about 40 minutes). Allow chicken to cool enough to be handled. Use two forks to shred the chicken. Add shredded chicken and remaining ingredients to crock pot or dutch oven. Simmer on low for as little as 30 minutes or as long as all afternoon.

  2. Garnish with sour cream and cheese if desired.
