Simple peanut based shredded pork dish

Recipe Ingredients for Crock Pot Thai Pork

2 lb pork loin, cut into 1-2 inch sections
2 c red bell pepper, julienned (~2, I like more)
1/4 c teriyaki sauce (low salt fine)
2 tbsp rice wine vinegar or white wine vinegar
1 tsp crushed red pepper flakes
2 garlic cloves, minced
1/4 c creamy peanut butter
1/4 c honey

Recipe Directions for Crock Pot Thai Pork

  1. Serve with: rice, lime wedges; Top with: sliced green onion, crushed peanuts.

  2. Trim fat from pork.

  3. Place red peppers in bottom of crock pot, then add pork.

  4. Combine teriyaki sauce, vinegar, red pepper flakes, and garlic. Pour over peppers and pork.

  5. Cook on low 6-8 hours (or high 4-6 hours).

  6. Shred pork (using 2 forks to pull apart works well, should shred easily).

  7. Mix in peanut butter and honey. Yum!
