Crock Pot Shredded Pork and Red Kidney Beans

Recipe Ingredients for Crock Pot Shredded Pork and Red Kidney Beans

1 1/4 pounds pork tenderloin, fat trimmed
1/2 onion, sliced
1 red pepper, sliced
16 oz organic red kidney beans
2 oz taco seasoning
2 tablespoons olive oil
1 cup tomato sauce, no salt
8 oz vegetable stock, low sodium
1/2 teaspoon salt
1/4 teaspoon pepper
2 tbsp jalapeno, chopped

Recipe Directions for Crock Pot Shredded Pork and Red Kidney Beans

  1. combine oil and taco seasoning to make a rub

  2. apply rub all over pork, marinade in fridge overnight

  3. combine remaining ingredients in bottom of crock pot, mix well

  4. nestle pork into vegetables in crock pot, cook on low for 4-5 hours

  5. shred pork with fork when done and serve w/ corn tortillas
