Crock Pot Roast Recipe

Brown the roast, saute the veggies, cook in crock pot

Recipe Ingredients for Crock Pot Roast

2 lb beef roast, boneless
2 T flour
1 lb carrots
1 medium onion, chopped
3 cloves garlic, minced
8 oz mushrooms, sliced
4 cups beef broth

Recipe Directions for Crock Pot Roast

  1. Chop the carrots into bite-size pieces.

  2. Season the flour with salt & pepper to taste. Rinse and pat dry the boneless roast.

  3. Heat 2 tablespoons of oil in a large skillet; using tongs place the roast in the hot oil & brown for 5 minutes. Turn over (using tongs) and brown another 5 minutes.

  4. Remove browned roast from skillet and place in crock pot. Add the raw carrots.

  5. Lower the heat under the skillet and add the onions and garlic. Saute until transparent and soft.

  6. Add mushrooms to skillet and cook another 2 minutes.

  7. Add veggies to crock pot.

  8. Pour beef broth over all and turn crock pot to low.

  9. Cook 5-7 hours.

  10. When roast is done, refrigerate over night.

  11. Skim fat off top. Then remove roast and cut into 7 pieces.

  12. Reheat (on high) and serve, or divide into freezer containers and freeze for later use.
