A simple pumpkin soup. You can use whatever veggies you have left over in your fridge for this one

Recipe Ingredients for Crock Pot Pumpkin Soup

2 cups Pumpkin
4 mushrooms, chopped
1 large cooking onion, chopped
3 cups water
1 tsp nutmeg
3/4 tsp cumin
1 serving Knorr Vegetable Instant Stock Mix
1 garlic clove
1/2 cup milk

Recipe Directions for Crock Pot Pumpkin Soup

  1. Chop the mushrooms and onion.

  2. Add all the ingredients to a crock pot and mix well.

  3. Turn on high for 4-8 hours.

  4. Using an immersion blender, blend the soup until smooth.

  5. Half an hour before serving, stir the milk in to give the soup some creaminess.
