Veggie'd up version of a recipe I found online

Recipe Ingredients for Crock pot Pesto Spinach Lasagna

2 cup Whole Wheat Penne
9 oz Spinach
24 oz Four Cheese
8 oz Sun Dried Tomato Pesto Sauce and Spread
15 oz fat free cottage cheese
8 oz Fancy Shredded Italian Blend Cheese
1 medium Yellow Hothouse Bell Pepper
1 medium (2-1/2" dia) Onions
1 cup, chopped Carrots

Recipe Directions for Crock pot Pesto Spinach Lasagna

  1. Use a 4 qt. slow cooker.

  2. Chop all the veggies. If you want to hide the carrots, chop them very fine or shred them. Mix the veggies, except for the spinach, with the pasta sauce.

  3. Put a spoonful of the mixture (about 1/4 cup) into the bottom of your cooker and swirl it around.

  4. Layer 1/2 cup dry pasta on bottom. Add 1/3 of both the ricotta and the pesto. Then 1/3 of the spinach. Cover with 1/2 cup of the cheese.

  5. Start layering again with 1/2 cup of sauce. Repeat steps until you finish with a layer of dry pasta, remaining sauce and cheese.

  6. Add 1/4 cup of water to the jars of sauce, swirl it around and pour it around the edge of the pot.

  7. Cook on low for about 6 hours or high 3-4. It will start to brown and begin to pull away from the sides when done, but taste test a piece of pasta to check for texture. Uncover and let rest for 10-15 mins before serving.
