This can be served as either a side dish or a soup. Double your serving size for soup. This can be spiced up a little by substituting Rotel tomatoes for the plain diced tomatoes.

Recipe Ingredients for Crock Pot Mixed Beans

20 oz dried beans, mixed
24 oz beef broth
14 oz diced tomatoes, not drained
1 medium onion, chopped
3 garlic cloves, finely diced

Recipe Directions for Crock Pot Mixed Beans

Wash and cull beans, soak overnight. Place in crock pot with remaining ingredients. Cook on low for 8 to 12 hours, until beans are soft but not mushy.
