Lentils and sausage cook in the slow cooker. Tastes so good and it's so easy.

Recipe Ingredients for Crock Pot Lentils and Sausage

16 ounces lentils, dry
16 ounces tomatoes, canned
28 ounce chicken broth
3 cups water
3 carrots, chopped
3 stalks celery chopped
1 onion, chopped
4 cloves garlic, minced
1 1/2 pounds sausage
2 teaspoons olive oil

Recipe Directions for Crock Pot Lentils and Sausage

  1. In a non-stick fry pan, saute onion, garlic, carrots and celery in olive oil until soft. Place in a 6 quart-slow cooker.

  2. Rinse and drain lentils, but do not soak. Place them in the slow cooker with vegetables. Add the tomatoes (I use a can of Rotel for extra flavor), broth, water and sausage (I use chicken sausage. I place it in the cooker whole then slice into 1/2 pieces before serving).

  3. Cover and cook on high for 3 hours or low for 6 or 7 hours. Stir well before serving.
