Crock Pot Italian Chicken Recipe

Makes 7 servings



Good for dinner with bread or pasta. Sprinkle with fresh chopped herbs when serving--basil oregano, rosemary, mint etc will do. Can also put some in, especially rosemary.

Recipe Ingredients for Crock pot Italian chicken

1 3/10 lb chicken breast, skinless boneless
2 c tomatoes
3 c eggplants
15 kalamata olives
1 c red wine
5 T olive oil
1 onion, sliced
3 cloves garlic
1 salt and pepper to taste

Recipe Directions for Crock pot Italian chicken

  1. Cut chicken into large chunks. Chop tomatoes. Put all ingredients in a crockpot and cook on high for 3-4 hours.

  2. The reason for the oil is that I sauted the chicken and the eggplants first (the eggplants took up a lot of oil) before putting them in but you don't have to do this step and can omit the oil.
