Recipe Ingredients for Crock Pot "Curry"

2 tablespoons olive oil
6 cloves Garlic
200 grams red onion
1 teaspoon ground ginger
75 grams raw celery
150 grams raw white cabbage
100 grams raw carrots
275 grams raw sweet potato
400 grams raw apple
1/4 cup golden raisins
225 grams garbanzo beans
225 grams raw fennel
3 cups low sodium vegetable broth

Recipe Directions for Crock Pot "Curry"

  1. Combine oil, 1 chopped red onion, garlic, ginger, and 3 tsps of gluten free red curry paste.

  2. After thoroughly mixed, add all the other ingredients(amounts approx: 2 chopped carrots, 2 medium cubed sweet potatoes, 3 sliced celery stalks, 1 sliced fennel bulb, 1/2 head shredded cabbage, 2 cubed apples, 1 can of rinsed and drained garbanzo beans).

  3. Add veggie broth and stir well, making sure curry paste gets mixed throughout.

  4. Cook in slow cooker for 6 hours on LOW setting.
