Recipe Ingredients for Crock-pot Coq au Vin

1 1/2 cup, sliced Onions
12 oz Carrots, Baby
2 cup, pieces or slices Mushrooms
1/4 tsp Pepper, Black
1/4 tsp Salt, Table
24 oz Chicken
1 tsp Thyme, Fresh
1 1/2 tsp Garlic
1/2 oz Cornstarch
4 oz Wine, Table, Red
8 fl oz Organic Low Sodium Chicken Broth
4 slices turkey bacon

Recipe Directions for Crock-pot Coq au Vin

  1. Prepare bacon on the stove in a skillet sprayed with non-stick cooking spray or on a microwave-safe plate in the microwave. Once cool enough to handle, crumble or chop and set aside.

  2. Combine broth, wine, cornstarch, 1 tbsp. garlic, and the 2 sprigs of thyme in the crock pot. Stir until completely mixed. Season chicken with salt and pepper, and add to pot. Add bacon and veggies and stir thoroughly.

  3. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours until chicken is cooked through.
