A really easy chili recipe that can be varied: add more or different vegetables, use a variety of beans, or make it vegetarian by leaving out the meat.

Recipe Ingredients for Crock-pot chili

3 cups black beans, drained and rinsed
28 ounce diced tomatoes with juice
1/3 bell pepper, diced
1/3 carrot, diced
1 onion, diced
4 ounce chopped green chilies
1 tbsp chili powder
1/2 tsp salt
1 tbsp olive oil
1 cup water
1/4 pound hamburger, browned, drained and rinsed

Recipe Directions for Crock-pot chili

  1. In a frying pan, cook onion, bell pepper and carrot in the oil until tender.

  2. Put all ingredients in a crock pot and cook 6-8 hours on low.
