Crock Pot Chili Recipe

If the ingredients look complicated, keep this in mind: I use a pound of lean ground turkey, a cup of dried beans (soaked overnight the night before), 1 small can chiles, 2 cans diced tomatoes, 1 bag frozen corn, 1 bag frozen onion, green pepper & celery mix. Then it's just the spices, all of which are already in my pantry. This makes 8 two-cup servings, or 16 one-cup servings.

Recipe Ingredients for Crock pot chili

1/2 c dry red beans
1/2 c dry black beans
16 oz lean ground turkey
1 tsp minced garlic
2 tsp chili powder
1 tsp cumin
1/4 tsp cayenne pepper
1/2 tsp dried basil
1/2 tsp paprika
3 c water
6 oz tomato paste
4 1/2 oz chopped green chiles
29 oz canned diced tomatoes, no salt added
16 oz corn
6 oz chopped onion
5 oz chopped green pepper
5 oz chopped celery

Recipe Directions for Crock pot chili

  1. Soak beans overnight as directed. Drain and rinse.

  2. Brown meat in skillet.

  3. Place beans and ground meat in large crock pot. Stir in spices, water and tomato paste.

  4. Add remaining ingredients, gently stir, cover and cook for several hours, stirring occasionally.
