Recipe Ingredients for Crock Pot Chicken & Vegetables

2 lbs. chicken breast, boneless, skinless
2 cups chicken broth, low sodium
16 oz diced tomatoes
2 cup snap peas
2 cup carrots, frozen baby
2 cup mushrooms, fresh, cut in big pieces
1 cup green peppers
2 stalk celery, chopped large
1 tbsp parmesan cheese
1/8 tsp pepper
1/8 tsp garlic
1/8 tsp onion flakes
18 oz potatoes, 1 can, drained

Recipe Directions for Crock Pot Chicken & Vegetables

  1. chop large fresh mushrooms into quarters

  2. chop celery into large pieces

  3. add carrots. snap peas, peppers and 1 can of drained, sliced potatoes to crock pot

  4. pour chicken broth over all

  5. add seasoning to taste

  6. place chicken into crockpot - can be still frozen

  7. pour 1 can of diced tomatoes with juice over all

  8. add water to just cover chicken

  9. set slow cooker to low and cook for 6-8 hours

  10. can substiture 1 1/2 cup of egg noodles for the can of potatoes

  11. add parmesan cheese to taste or sprinkle with shredded cheddar cheese
