Recipe Ingredients for Crock Pot Chicken Santa Fe

24 oz Fresh Boneless Skinless Chicken Breasts
2.5 serving With Lime Juice and Cilantro Mexican Festival Diced Tomatoes
15 oz Diced Tomatoes, No Salt Added
15 oz Black Beans
1 cup Broth
1 cup (8 fl oz) Water
1 tsp Onion Powder
1 tsp Cumin
0.5 medium raw Onion Red

Recipe Directions for Crock Pot Chicken Santa Fe

Combine chicken broth, water, beans, tomatoes, garlic powder, onion powder, cumin, and red onion in the crock pot. Place chicken breast on top (actually so much fluid it sinks a little). Cook on low for 10 hours or on high for 6 hours. Before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust seasoning if necessary. Can serve with rice or a tortilla. If in a tortilla , scoop out what you need (1 cup per serving) and squeeze out some of the extra juices if there are any left. I used the Ole High Fiber tortillas that have only 71 calories.
