0.5 serving Extra Virgin Olive Oil
0.5 cup, chopped Onions
3 clove Garlic
3 cup Natural Goodness Chicken Broth
0.5 cup Tomato Sauce
1 tbsp Pomegranate Chipotle Sauce
15 oz Black Beans
14.5 oz Petite Diced Tomatoes
14.5 oz Petite Diced Tomatoes
14.5 oz Petite Diced Tomatoes
14.5 oz Petite Diced Tomatoes
2 cup Corn, Sweet, Yellow
2 Serving Chicken
0.25 cup, chopped Onions, Spring Or Scallions

Recipe Directions for Crock Pot Chicken Enchilada Soup

Heat oil in a sauce pan over medium-low heat. Add onion and garlic and saute until soft. Slowly add chicken broth, tomato sauce, and chipotle adobo sauce and bring to boil. Add cilantro and remove from heat. Pour into crock pot. Add drained beans, diced tomatoes, corn and spices. Add chicken, cover and cook over low 4-6 hours. Remove chicken and shred then add back into crock pot. Adjust seasoning, pour in bowls and top with fat free sour cream and cheese.
