Recipe Ingredients for Créme Brulée

420 grams Home Brand Fresh Cream
2 tsp Vanilla Extract
70 grams Sugars, Granulated
4 large Egg, Yolk

Recipe Directions for Créme Brulée

  1. Pour the cream into a saucepan. Slice the vanilla pod and scrape the seeds into the cream. Chop the empty pod into small pieces, and add to the cream too. Bring the cream and vanilla to boiling point, then lower the heat and simmer gently for five minutes.

  2. Beat the egg yolks and sugar together in a large heat-proof bowl until creamy and pale. Bring the cream and vanilla back to the boil, then pour it over the egg mixture, whisking all the time until thickened - this indicates that the eggs have begun to cook slightly.

  3. Strain the mixture through a fine sieve into a large jug, then pour into ramekins to about two thirds full. Put the ramekins in a large roasting tray and pour nin enough hot water to come halfway up the sides of the ramekins. Bake on the centre shelf for about 30 minutes, or until the custards are just set, and still a bit wobbly in the middle. Remove the ramekins from the water, and allow to cool to room temperature.

  4. When you're ready to serve, sprinkle one level teaspoon of caster sugar evenly over the surface of each créme, then caramelise with cooking torch.
