Recipe from "smitten kitchen.com" My husband said these are one of the best cookies he has ever eaten, and he has tasted a lot of cookies. These cookies are pretty big, probably could make 36 and cut down the calories per cookie.

Recipe Ingredients for Crispy salted oatmeal white chocolate cookies

1 cup flour, all purpose
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
14 tbl butter, (1 - 3/4 sticks) unsalted, slightly softened
1 cup sugar
1/4 cup light brown sugar, packed
1 egg, large
1 tsp vanilla
2 1/2 cups oatmeal, old fashion rolled oats
6 oz white chocolate, good quality real white chocolate, chopped
1/2 tsp salt (flakey, like Maldon or fleur de sel)

Recipe Directions for Crispy salted oatmeal white chocolate cookies

  1. Preheat oven to 350.

  2. Line baking sheet with parchment or Silat.

  3. Whisk flour, baking powder, baking soda, and table salt in medium bowl.

  4. Beat butter and sugars until light and fluffy. Scrape down bowl with rubber spatula, then add egg and vanilla and beat until incorporated. Scrape down bowl again. Add flour mixture gradually and mix until just incorporated and smooth. Gradually add oats and white chocolate and mix until well incorporated.

  5. Divide dough into 24 equal portions, each about 2 tablespoons. Roll between palms into balls, then place on lined baking sheet about 2-1/2 inches apart. Using fingertips, gently press down each ball to about 3/4 inch thickness.

  6. Sprinkle 2 or 3 flakes on each cookie.

  7. Bake until cookies are deep golden brown, about 15 -20 minutes. Transfer baking sheet to wire reck to cool
