Crispy Potatoes in Spicy Tomato Sauce

Recipe Ingredients for Crispy Potatoes in Spicy Tomato Sauce

1 kg (2.2lb) Potatoes
2 tbsp oil, for deep-frying
500 g Ripe Roma Tomatoes
2 tbsp Olive Oil
1/2 Red Onion, finely chopped
2 Garlic Cloves, crushed
3 tsp paprika
1/4 tsp Cayenne Pepper
1 tsp Sugar
1 tbsp parsley, chopped, to garnish

Recipe Directions for Crispy Potatoes in Spicy Tomato Sauce

  1. Cut the potatoes into 2cm cubes. Rinse, then drain well and pat completely dry.

  2. Fill a large heavy-based saucepan one-third full of oil and heat to 180*C (350*F), or until a cube of bread dropped into the oil turns golden brown in 15 seconds. Cook the potato in batches for 10 minutes, or until golden. Drain well on paper towel. Do not discard the oil.

  3. Score a cross on the base of each tomato. Put the tomatoes in a heatproof bowl and cover with boiling water. Leave for 30 seconds, then transfer to cold water, drain and peel the skin away from the cross. Cut the tomatoes in half and roughly chop the flesh.

  4. Heat the olive oil in a saucepan over medium heat and cook the onion for 3 minutes, or until softened. Add the garlic, paprika and cayenne pepper and cook for 1-2 minutes, until fragrant.

  5. Add the tomato, sugar and 90mL of water and cook, stirring occasionally, for 20 minutes, or until thick and pulpy.

  6. Cool slightly and transfer the tomato mixture to a food processor and blend until smooth, adding a little water if necessary.

  7. Before you are ready to serve, return the sauce to the saucepan and simmer over low heat for 2 minutes to heat through. Season well.

  8. Reheat the oil to 180*C (350*F) and cook the potato again, in batches, for 2 minutes or until very crisp and golden. Drain on paper towel. This second frying makes the potato extra crispy and stops the sauce soaking in immediately.

  9. Place on a platter and cover with warmed tomato sauce.

  10. Sprinkle with parsley and serve.
