Hash browns and omelet. Pretty high in calories. BEWARE! Modified from caseyallaround's recipe.

Recipe Ingredients for Crispy Potatoe Omelet (high in calories)

1 potato
2 tbs chopped onions
2 tbs chopped green peppers
2 eggs
1 tbs butter

Recipe Directions for Crispy Potatoe Omelet (high in calories)

  1. Finely grate (parm cheese grater) par boiled potato

  2. Melt butter in flat griddle

  3. Mix onions and pepper with potato, add seasoning

  4. Spread mixture thinly and firmly in a round shape: cook on high until crisp.

  5. Turn over (use 2 spatulas so it stays intact)

  6. Slowly pour egg s onto the top of the pancake. Cover, and cook until firm.

  7. Flip 1/2 over (into itself). It should resemble a very high omelet.

  8. Enjoy!
