Recipe Ingredients for Crispy Polenta

1 cup cornmeal
4 cups onion, chopped
2 tbs olive oil
1/4 cup cheddar cheese
1/4 cup monterey jack cheese
2 cups water
1/2 tsp salt

Recipe Directions for Crispy Polenta

  1. Stir 1 cup of cornmeal into 1 cup of warm water with 1/2 tsp salt, set aside.

  2. Carmelize the onions in 1 tablespoon of olive oil until well browned, but not burned.

  3. Boil 1 cup of water and add to the cornmeal, stirring constantly for about 5 minutes or until the consistency of a heavy batter.

  4. Stir in the cheeses and 2/3 of the onions and mix til well blended.

  5. Pour into a greased, floured 8 x 8 or 7 x 11 baking dish, top with remaining onions.

  6. Bake at 400 for 40-50 minutes or until top and sides are crisp and brown.

  7. Let cool slightly and cut into servings
