The counter would not allow me to enter oil for frying so the 3.2 ounce of oil are based on 10% retention from frying beef in 1 quart.

Recipe Ingredients for Crispy Orange Beef

1 1/2 pounds beef, top sirloin, thinly sliced
1/3 cup sugar
2/3 cup rice wine vinegar
2/3 cup orange juice
1 teaspoon salt
1 tablespoon soy sauce
1 tablespoon tamari
1/4 cup cornstarch
4 tablespoons grated fresh ginger
2 tablespoons minced garlic
2 cups snow peas
1/2 cup shredded carrot
1/2 cup chopped scallions
1 tablespoon sesame oil, divided
3 1/5 ounces oil

Recipe Directions for Crispy Orange Beef

  1. Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.

  2. Add sesame oil to wok and stir-fry snow peas, carrot and scallion. Set aside.

  3. Toss dried beef in cornstarch to coat. Then let rest 10 minutes, place in a pasta strainer and shake over the sink.

  4. Heat 1 quart oil in a wok over medium-high heat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.

  5. Add ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef and vegetables, and heat through, stirring to coat.
