Recipe Ingredients for Crispy Moong Dal Snacks

2 cups split moong dal (mung beans), uncooked
1/4 cup brown rice, uncooked
1 tsp garam masala
1 tsp ground coriander
1 tsp red pepper flakes
3/4 tsp cumin seeds
1 small onion, diced fine
2 cloves garlic, minced
1/3 c olive oil

Recipe Directions for Crispy Moong Dal Snacks

  1. Cook mung beans in ample water for 20-25 minutes or until very tender. Prepare brown rice ahead of time, or start about 40 minutes before preparing mung beans.

  2. Meanwhile, cook onion, garlic, and spices in olive oil over medium heat until tender, brown, and fragrant. Mix in brown rice and cook another minute or so, tossing well to combine.

  3. Drain excess liquid from mung beans and mix well with brown rice mixture. Allow to cool until mixture has reached a temperature comfortable enough to work with in your hands. Stir in panko if mixture is still too wet to form into ball shapes, adding a little at a time until mixture holds.

  4. Preheat oven to 350 F. Mix sesame seeds and nigella seeds in a 2:1 ratio, respectively, in a plate. Form bean mixture into small balls and coat with sesame seeds. Place on parchment lined baking sheet and bake 20-25 minutes, or until outsides are crisp. Serve warm or room temperature with spicy ketchup or yogurt sauce.
