Recipe Ingredients for Crispy Honey Mustard Chicken

1 cup bread crumbs
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup mayonnaise
1/4 cup dijon mustard
1/4 cup honey
3 chicken breast
3 cups wild rice

Recipe Directions for Crispy Honey Mustard Chicken

  1. Preheat oven at 425 degrees.

  2. Cook wild rice according to package instructions.

  3. Combine bread crumbs,oil, salt and pepper. Set aside.

  4. In a separate bowl combine mayonnaise, mustard and honey. Set aside.

  5. Cut each chicken breast in half and pat dry and transfer to a 9x13in baking dish.

  6. Spread half the mayonnaise mixture over chicken. Reserve the other half for serving. Sprinkle with bread crumbs. Press lightly to adhere.

  7. Bake until crumbs are golden brown and chicken registers 160 degrees, about 18-22 minutes.

  8. Serve over wild rice topped with remaining sauce.
