Recipe Ingredients for Crispy Fish Fingers

4 slices whole wheat bread
1/2 cup whole wheat flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1 lb. flounder, filets
2 eggs, beaten

Recipe Directions for Crispy Fish Fingers

  1. Put the bread in the bowl of a food processor and pulse until bread crumbs form.

  2. Toast the crumbs in a large, dry, nonstick skillet over medium-high heat, stirring frequently and breaking up crumbs with a spoon if they begin to stick together, until crisp and golden brown. Remove from heat.

  3. Preheat the oven to 400 degrees F.

  4. Spray a cooking sheet with olive oil cooking spray.

  5. On a plate, combine the flour, salt, and pepper.

  6. Cut the filets into 4 by 1 inch strips.

  7. A few pieces at a time, dip the fish into the flour mixture, dusting off the excess.

  8. Dip the fish in the egg, and then the breadcrumbs.

  9. Arrange on the baking sheet.

  10. Bake until golden and cooked through, about 10 minutes.

  11. Serve with "Smarter Tarter" sauce!
