Light and Crispy waffles. Make a double batch and freeze the extra!

Recipe Ingredients for Crispy Cornmeal Waffles

1/2 c. flour
1 c. cornmeal
1/2 c. cornstarch
1/2 t. salt
1 t. baking powder
1/2 t. baking soda
4 T splenda granular, or 6 packets
2 c. buttermilk, lowfat
4 T. canola oil
2 large eggs, separated
1 t. vanilla

Recipe Directions for Crispy Cornmeal Waffles

  1. Whisk dry ingrediants together in one bowl.

  2. In a second bowl, whisk together liquid ingrediants except for egg whites.

  3. Whisk egg whites in a small bowl until soft peaks form.

  4. Combine wet and dry ingrediants. Then, gently fold egg whites into the mixture.

  5. Use 1/2c. batter for each waffle iron, with iron set on 4.
