Crispy chicken with stir fried carrots, green pepper, onion and pineapple

Recipe Ingredients for Crispy Chicken Stir-fry

1 cup Bisquick baking mix
1/2 teaspoon pepper
2 cups uncooked chicken breast, diced
2 eggs, slightly beaten
1/4 cup vegetable oil
3 medium carrots, cut into 1/2" pieces
1 green pepper, cut into strips
1 small onion, cut into thin slices and separated into rings
20 ounces pineapple chunks, drained

Recipe Directions for Crispy Chicken Stir-fry

  1. Mix Bisquick and pepper in large plastic bag.

  2. Stir chicken into eggs.

  3. Remove chicken with slotted spoon and place in bag with Bisquick mix.

  4. Shake bag until chicken is coated.

  5. Remove chicken from bag.

  6. Heat 1 tablespoon of the oil in 10" skillet over medium heat until hot.

  7. Stir fry carrots 2 minutes.

  8. Add green pepper and stir fry 2 more minutes.

  9. Remove from skillet and keep warm.

  10. Add remaining oil to skillet and heat until hot.

  11. Stir fry chicken until golden brown.

  12. Add carrots, green pepper and onion.

  13. Stir fry until warm (about 2 minutes).

  14. Stir in pineapple and serve.
