Recipe Ingredients for Crispy Chicken

1/4 cup cornmeal, preferably coarse
1/8 tsp salt, to taste
1 freshly ground pepper to taste
1 egg white
1/2 lb cooked chicken cutlets, net from 0.75 lb fresh boneless, skinless, pounded chicken breast (5064)
1 tablespoon olive oil

Recipe Directions for Crispy Chicken

  1. Season cornmeal with salt and pepper to taste. Beat egg white. Dip chicken into egg white and then cornmeal, coating both sides well.

  2. Heat olive oil in a nonstick skillet over medium-high heat. Add chicken and sauté 2 minutes. Turn and sauté about 2 minutes, until chicken is cooked through (170 degrees on a meat thermometer).
