Who needs fatty fried chicken with this recipe! Flaxseed adds protein and healthy omega 3 fatty acids. Low Sodium saltines can be used in place of regular to reduce sodium count. Panko is also a good substitute. Original recipe calls for seasoned salt as opposed to regular, feel free to substitute or leave it out all together. I like to use buttermilk instead of skim milk. Gives it an extra tang (and doesnt affect the calories either!) The best thing about this recipe is all the seasonings and ingredients are adjustable. I suggest using whatever seasonings used for regular fried chicken. I usually just use some seasoned salt, pepper and garlic powder. Crackers and flax can be subsituted for crushed whole grain crackers or cereal. (might have to research the calorie count though!)

Recipe Ingredients for Crispy Chicken (Originally from Ameriflax.com)

1 Egg
3 tbs. Skim Milk
1/2 c Ground Flaxseed
1/2 c saltines
1/4 tsp. Black Pepper
1 tbs. Dried Parsley Flakes
1 tsp. Paprika
1 tsp. Chili Powder
1 tsp. Garlic Powder
1 tsp. salt
2 lbs. Chicken, white meat
2 tbs. olive oil

Recipe Directions for Crispy Chicken (Originally from Ameriflax.com)

  1. ? Preheat oven to 350° F.

  2. ? In a small bowl, combine beaten egg and milk.

  3. ? In a shallow container, combine ground flax, cracker crumbs, pepper, parsley, paprika, chili, garlic and seasoned salt

  4. ? Skin chicken and rinse with water. Pat dry.

  5. ? Dip chicken pieces into egg mixture; coat with crumb mixture.

  6. ? Place chicken on greased 15 x 10 3/4 inch baking pan so pieces do not touch. (My addition: Put metal cooling racks on cookie sheets and rest chicken on the racks. This allows heat to crisp up the bottom of the chicken pieces).

  7. ? Drizzle pieces with melted butter.

  8. ? Bake for 45 minutes or until chicken is tender and no longer pink (this applies to BONE IN chicken). Do not turn chicken pieces while baking. (Note, if you use chicken strips or tenders, time will need to be adjusted. Chicken strips or tenders will probably take anywhere from 10-15 minutes, depending on thickness. Cook till no longer pink still applies, though.)

  9. ENJOY!
