Recipe Ingredients for Crispy Cheddar Chicken

1 9/10 pound boneless, skinless chicken breasts
10 g Crackers Reduced Fat
1/4 teaspoon salt
1/8 teaspoon pepper
113 g 2% shredded cheddar cheese
23 g 2% reduced fat milk
1 teaspoon dried parsley
10 1/2 ounces healthy request cream of chicken soup
28 2/5 g Yogurt
2 tablespoons Vegetable Oil Spread

Recipe Directions for Crispy Cheddar Chicken

  1. Preheat oven to 400.

  2. Cut each chicken breast into 3 large pieces.

  3. In a food processor, grind up 1 sleeve of Ritz crackers.

  4. Pour 1/2 cup milk, 1 cup cheese, and the crumbs into 3 separate dishes.

  5. Add the salt and pepper into the crumbs and stir the mixture to combine.

  6. Spray a 9x13 pan with cooking spray.

  7. Dip each piece of chicken into the milk, then the cheese, and finally the cracker crumbs.

  8. Lay the chicken in the pan and sprinkle with the dried parsley.

  9. Cover the pan with foil and bake for 35 minutes.

  10. Remove the foil and bake for an additional 10 minutes, or until the edges of the chicken are golden and crispy.

  11. {For the Sauce}

  12. Combine the soup, yogurt and butter in a sauce pan and whisk until smooth.

  13. Heat over low-medium heat until the sauce is hot.

  14. Serve over the chicken.
