Crispy Cauliflower with Lemon and Mint

Recipe Ingredients for Crispy Cauliflower with Lemon and Mint

1 lb cauliflower
4 tbsp extra virgin olive oil
1 tbsp lemon juice
1/4 tsp red pepper flakes
1 tbsp mint leaves, torn

Recipe Directions for Crispy Cauliflower with Lemon and Mint

  1. preheat oven to 400

  2. toss cauliflower with 2 tbsp olive oil and pinch of salt

  3. roast on baking sheet for 15 minutes

  4. remove from oven and let cool completely

  5. heat 2 tbsp olive oil in skillet

  6. add cauliflower and cook over medium-high heat, stirring, until crispy and warmed through, about 4 minutes

  7. toss cauliflower with lemon juice, pepper flakes and mint
