I adapted this recipe from Closet Cooking. These are now only 4 pts+ per serving.

Recipe Ingredients for Crispy Baked Portabello Fries

2 Portobello Mushrooms
2 egg whites, lightly beaten
3/4 cup Panko Breadcrumbs
1/4 cup parmigiano reggiano (parmesan)
1/2 teaspoon thyme
1 salt and pepper to taste
1 oil spray

Recipe Directions for Crispy Baked Portabello Fries

  1. Remove gills of mushrooms and slice 1/4 inch thick.

  2. Mix panko, parmesan, thyme, salt and pepper.

  3. Dip the portobello slices in the egg whites and then into a mixture of the panko breadcrumbs, parmensan, thyme salt and pepper.

  4. Place the mushroom slices on a wire rack on a baking sheet, spray with a little oil spray and bake in a preheated 425F oven until golden brown, about 7-10 minutes per side.
