Criollo Beans and Rice Recipe

Authentic vegetarian version of the classic "big island" dish.

Recipe Ingredients for Criollo Beans and Rice

1 1/2 c. onion, diced
1/4 c. garlic, minced fine (6 - 8 cloves)
1 c. pepper, green, diced
1 c. pepper, red, diced
3 tsp. vegetable oil
1 tbsp tomato, Paste, without salt
4 c. vegetable broth
2 tbsp oregano, dried
32 oz. beans, Pink, (Rosado) drained & rinsed well
1/2 c. cilantro, minced
1 c rice, long grain
2 c water

Recipe Directions for Criollo Beans and Rice

  1. Heat oil in a large pot set on medium heat.

  2. Saute onion, garlic, peppers until lightly browned and soft.

  3. Add tomato paste and broth, bring to a simmer.

  4. Add rinsed and drained beans, oregano and cilantro. Stir well. Continue to simmer, stirring occasionally, careful not to let them boil. After 15 minutes, mash some of the beans on the side of the pot as you stir, to thicken the mix. After 20 - 25 minutes, remove from heat.

  5. Serve next to cooked rice (follow package directions).

  6. Plan on a 1/3 c. rice and 1 c. beans w/ gravy per plate.
