A simple but delicious recipe for crepes. Very high in saturated fat and cholesterol, but if your diet is typically quite low in those aspects, an occasional crepe won't hurt much. I have never substituted margarine for the butter or egg substitute for the eggs, but that would be worth trying. Make sure to use a non-stick pan that is light enough to pick up and quickly swirl around. Alternative you could use one of those crepe-paddles to smooth out the batter.

Recipe Ingredients for Crepes

4 medium eggs
4/5 cup all-purpose flour
1/8 tsp salt
2 1/4 tablespoons salted butter (melted)
1 cup soymilk (unsweetened)
1/2 cup water
2 tbsp. powdered sugar

Recipe Directions for Crepes

  1. Combine ingredients, mix well, cover with plastic wrap, and let sit for 1/2 hour.

  2. To cook, heat skillet until hot. Scoop out about 1/4 C. batter, swirl around skillet, and cook over medium-high heat until bottom starts to lightly brown (about 1 1/2 or 2 minutes.) Flip and briefly cook other side.

  3. Serve as either sweet or savory crepes. For sweet, I like to put nutella, strawberries, plain yogurt, and slivered almonds, with a light dusting of powdered sugar on top. For savory, a combo of swiss chard, potatoes, cheese, and egg is really good. We also add plain yogurt to that.
