Crepes Recipe

Makes 15 servings



Delicious for breakfast or dessert! Use whole wheat flour for added benefits!!

Recipe Ingredients for Crepes

1 1/2 cups flour
2 tbsp wheat germ
1 tbsp sugar
1/2 tsp baking powder
1/2 tsp salt
2 cups soy milk
2 tbsp margarine
1/2 tsp vanilla
2 eggs

Recipe Directions for Crepes

  1. Mix flour, sugar, baking powder, salt and wheat germ in a medium bowl.

  2. Melt margarine in the microwave.

  3. Stir remaining ingredients into flour mixture. Beat until smooth.

  4. Coat a 6- to 8- inch skillet with cooking spray.

  5. For each crepe, pour scant 1/4 cup batter into skillet. *IMMEDIATELY* rotate skillet until thin film covers bottom. Cook until light brown. Run wide spatula around edge to loosen; turn and cook other side until light brown.

  6. Stack crepes, placing waxed paper between each; keep covered. If desired, spread applesauce, fresh fruit, low-sugar preserves, etc. over each warm crepe; roll up.

  7. Note: These freeze well with wax paper in between them. Will keep in the fridge for about 5 days.
