Simple base crepes. Use omega eggs to make low on "bad" cholestrol.

Recipe Ingredients for crepes

1/2 cup skim milk
2 eggs
1 tablespoon olive oil
1/2 cup white flour
1 teaspoon granulated sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon vanilla extract

Recipe Directions for crepes

  1. Beat together eggs, milk, oil sugar & vanilla.

  2. Sift in flour, baking powder and salt.

  3. Batter should have consistency of thick cream.

  4. Spoon batter into hot non-stick pan over medium heat, one fifth at a time. Tilt pan to spread .

  5. Cook until bubbles form on top and underside is golden brown. Turn and cook until golden on bottom side.

  6. Serve with non-sugar jam, fresh fruit and yoghurt or anywhere crepes are useful.
