Crepes Recipe

Simple and delicious recipe for crepes with blueberries. (Other fillings can be easily substituted).

Recipe Ingredients for Crepes

1 cup flour
2 cups milk
1 egg
3 tbsp sugar
1 tbsp vanilla extract
1/2 cup frozen blueberries

Recipe Directions for Crepes

  1. Set frozen blueberries out to thaw (3 cups) while you cook.

  2. Mix flour, milk, eggs, sugar and vanilla in a bowl.

  3. Whisk briskly until the mixture is completely smooth.

  4. Heat medium-sized pan on Medium heat (or 1-2 hatch marks before "Med").

  5. Very lightly and evenly spray bottom of the pan with a light cooking spray.

  6. Scoop up 1/3 cup of batter and pour into the center of the pan.

  7. Quickly pick up the pan and carefully swirl the batter out until it is in an even circle.

  8. Place it back on the stove when the circle is as large as you desire. (The bigger the circle, the thinner the crepe will be).

  9. Watch closely until bubbles appear in the batter. (Usually takes about 1 1/2 minutes per side).

  10. When the bubbles appear and it begins to look cooked (solid) around the edges, gently lift the edge of the crepe with a dull knife and simultaneously slide a spatula beneath the center of the crepe. Quickly and firmly flip it over so that the cooked side is on top.

  11. Gently use spatula and dull knife to slide or pull crepe back to center of the pan as needed.

  12. Watch closely and check the cooking progress of the underside by lifting an edge lightly with a dull knife.

  13. When the second side appears cooked (golden, brown spots will appear) use spatula to lift it up and out of the pan.

  14. Repeat steps until batter is gone. (1 batch of batter sually makes between 6-8 crepes, depending on size).

  15. Add thawed blueberries to center, fold in half and serve.

  16. Note: As the pan gets hotter the cook time decreases to around 1 minute per side, so watch carefully so that you don't burn them!

  17. Note: Use other fresh fillings: raspberries, bananas, eggs with mint and spinach, limed grilled chicken with garlic chives, cheeses, tomatoes and green onions, etc.
