Makes 4 servings



Crepe recipe, 1 serving=2 crepes. Butter is for cooking. Use nonstick pan and spray for lower calorie count.

Recipe Ingredients for Crepes

4 eggs
1 1/3 c milk
1 c flour
1 tsp salt
1/4 c butter

Recipe Directions for Crepes

  1. Whisk eggs and milk together until smooth.

  2. Sift in flour and salt. Whisk again, getting out as many lumps as possible. Let stand to thicken about 10 minutes.

  3. Heat heavy cast iron frying pan, add 1/2 TBS butter, pour about 1/2 to 2/3 cup batter into pan. Let cook until almost set, flip over, cook until done.

  4. Fill as desired.

  5. Repeat. Yield: 8 crepes.
