From Joy of Cooking 1975 version. Makes 14 5-inch crepes.

Recipe Ingredients for Crepes

3/4 cup all-purpose flour
1/2 tsp salt
1 tsp double-acting baking powder
2 tbsp powdered sugar
2 eggs
2/3 cup 1% milk
1/3 cup water
1/2 tsp vanilla

Recipe Directions for Crepes

  1. Sift flour.

  2. Sift again with salt, baking powder and powdered sugar.

  3. Beat eggs and add milk, water, and vanilla.

  4. Make a well in the dry ingredients and pour in liquid. Combine with a few swift strokes, ignoring lumps as they will take care of themselves.

  5. You may rest the batter in the refrigerator for 3-6 hours.

  6. Heat non-stick skillet and add a small amount of butter or oil.

  7. Ladle in 1/4 cup of batter and swirl to spread.

  8. Cook over moderate heat until brown underneath and then flip.

  9. Fill as desired.
