A splurge, but not too bad for something so yummy!

Recipe Ingredients for Crepes

4 large Eggs
2 1/4 c 1% Milk
1 c Flour
1 T Sugar
1 pinch of salt
1/4 c unsalted butter

Recipe Directions for Crepes

  1. Pour the milk into a large bowl and add flour, beating thoroughly to eliminate lumps. Add eggs and beat until smooth, then add sugar and salt. Stir and let stand in refrigerator for up to 24 hours (or you can cook immediately).

  2. Heat a nonstick frying pan (12 - 14 inches) until a drop of water bounces and pops when dropped into the pan. Using a cold stick of unsalted butter, drag it around the pan holding the wrapped end to thinly coat the pan. Using a 1/3 C ladle, pour a serving into the pan, starting with the center, and then tilt the pan left and right until the batter coats the bottom and lower edge of the pan thinly. Allow the bottom side to brown slightly, then using a thin flexible spatula, slide under the crepe and lift it out, flipping it smoothly onto the other side. It should only take about 15-20 seconds per side or so to cook.

  3. Either serve them immediately one by one, or place them on a platter in the oven at 200 degrees until they are all cooked. Serve rolled with 1 T jam inside and sprinkle with a bit of powdered sugar, if desired.
