Crepes are great filled with ricotta mixed with Splenda and fresh fruit for a low-carb diet.

Recipe Ingredients for Crepes

2 1/2 cups milk
5 eggs
1 cup flour
6 tbsp butter
2 tbsp sugar
3/4 tsp salt

Recipe Directions for Crepes

  1. mix all ingredients.

  2. Heat small non-stick fry pan on medium.

  3. Melt a tiny bit of butter. (1 tsp at most)

  4. Spoon 1/2 c. batter into pan and swoosh around.

  5. Cook until the edges start to dry.

  6. Pry with a spatula and flip.

  7. Cook other side just a few seconds until set.
