A gluten free recipe that can make either pancakes, crepes, or lefse (the flour kind, not potato kind.)

Recipe Ingredients for Crepes, Pancakes, Lefse oh my!

1 cup oats (or slightly less oat flour)
1 cup cottage cheese
4 T DaVinci gourmet sugar free syrup - pancake flavor (0 cal)
8 egg whites
2 tsp baking powder

Recipe Directions for Crepes, Pancakes, Lefse oh my!

  1. Blend all ingredients thoroughly in a blender (I use a Blendtec) If using oats blend longer than oat flour. See additional notes for the subtle differences between uses.

  2. For Crepes don't use baking powder. Cook like crepes.

  3. For Pancakes use baking powder and allow batter to sit for 15 min to an hour (or make )

  4. For Lefse use baking powder and cook like Crepes.

  5. Makes 5 crepes
