Batter to make crepes. (Filling ingredients not included).

Recipe Ingredients for Crepe (Pancake Batter), [Adapted from Great Meals in ... 10 minutes, 20 minutes], p. 186

7/8 cup all-purpose flour
1 pinch salt
1 tbsp dried mint (or use 2 tbsp fresh)
1 1/4 cup skim milk
1 tbsp oil, for frying

Recipe Directions for Crepe (Pancake Batter), [Adapted from Great Meals in ... 10 minutes, 20 minutes], p. 186

  1. Sift the flour into bowl with the salt.

  2. Add the mint (chopped if using fresh).

  3. Gradually beat in egg and milk to form a smooth batter.

  4. Heat small amount of oil (or use cooking spray) in a 7" skillet. Cook for 1-2 minutes, or until underside is cooked. Flip crepe over & cook for 1 minute.

  5. Remove crepe from skillet & keep warm. Spoon in filling & folder into a cone shape. Optional: sprinkle with confectioner's sugar and toasted almonds.
