Recipe Ingredients for Creole-Style Red Bean Soup with Shrimp

1 tbsp olive oil
100 g scallions, chopped
170 g green pepper, chopped
50 g celery, chopped
2 cups low-sodium chicken broth
3 9/10 oz red kidney beans
15 1/2 oz canned diced tomatoes
1/2 tsp marjoram
1/2 tsp black pepper
12 oz shrimp

Recipe Directions for Creole-Style Red Bean Soup with Shrimp

  1. Heat the oil in a saucepan over medium heat. Add scallions, bell pepper, celery, and cook until vegetables are tender. Add broth, tbsp at a time, if pan gets dry.

  2. Stir in the can of kidney beans and can of tomatoes (with juice). Add the black pepper, marjoram, and broth. Bring to a boil at high. Reduce to low and cover, simmer, stirring occasionally, for 15 minutes until flavors have blended.

  3. Add shrimp and cook until shrimp are done (2 min).
