A vegetarian Creole-style rice recipe, full of healthy vegetables, lots of Creole seasoning and fresh parsley to top it all off. Could add in sausage or red beans.

Recipe Ingredients for Creole Rice

2 1tsp Vegetable Oil, Canola
1 cup, chopped Onions
1 cup, diced Celery
1 cup, chopped Carrots
0.75 cup, chopped Peppers, Sweet, Red
0.5 cup, chopped Peppers, Sweet, Green
2 clove Garlic
1.333 cup Rice, White, Long-grain, Regular, Cooked
1.5 tsp Creole Seasoning
2 tbsp Parsley
2 Cube Stock Cubes

Recipe Directions for Creole Rice

  1. Heat the oil in a large skillet over medium heat.

  2. Add the onion, celery, carrots, peppers and garlic and sautee until tender, about 6 to 8 minutes. Set aside.

  3. Cook the rice, adding the seasoning.

  4. When the rice is done, stir in the vegetables and parsley.

  5. Serve immediately.
