Recipe Ingredients for Creole Poached Chicken Breasts (WW)

1/2 cup low sodium chicken broth
2 medium onions, chopped
1 green bell pepper, chopped
1 celery stalk, chopped
1 small carrot, chopped
15 oz stewed tomatoes
4 cups rice
16 oz chicken breast

Recipe Directions for Creole Poached Chicken Breasts (WW)

  1. Saute all vegetables 4-5 minutes

  2. Stir in tomatoes, broth, spices

  3. Add chicken and bring to a boil

  4. Reduce heat, poach chicken (partially covered) 8-10 minutes, until chicken is cooked through

  5. Transfer chicken to a plate

  6. Simmer the sauce uncovered until it is reduced by half, 4-5 minutes

  7. Spoon sauce over chicken
