If I made again, I would eliminate the chickpeas. Can also garnish with scallions if desired.

Recipe Ingredients for Creole Codfish

1/2 lb cod
1/2 cp stewed tomatoes
1/2 yellow pepper, julienned
1 clove garlic
1/4 onion, sliced thin
1/4 cp chickpeas

Recipe Directions for Creole Codfish

  1. Spray ovenproof casserole with Pam for nonstick.

  2. Place cod in casserole and cover with peppers, garlic, onion and chickpeas if desired.

  3. Pour stewed tomatoes over top.

  4. Bake at 400 degrees F for 20-25 minutes until the fish flakes easily.
