This is a fabulous and quick way to end a busy weekday. Creole seasonings and herbs add comfort to this steamy dish in a bowl!

Recipe Ingredients for Creole Chicken

2 pounds skinless chicken thighs
2 tbsp. Seasoning
2 tbsp. canola oil
29 ounce Whole Peeled Tomatoes
1 cup low sodium chicken broth
1 large white onion, halved and sliced
1 medium green bell pepper
2 stalks celery, chopped
1 tsp. garlic powder
1 tsp. dried thyme
1/2 tsp. ground sage
2 tsp. fresh chopped parsley
2 cups uncooked white rice

Recipe Directions for Creole Chicken

Cook rice according to the directions. Season chicken thighs on both sides with creole seasoning. Heat oil on medium high heat in a large deep skillet. Brown chicken thighs on both sides. Add broth, onion, bell pepper, celery, thyme and sage to the chicken in the skillet. Add whole tomatoes breaking them up with your hands as you put them in the skillet. Bring to a boil. Lower the heat to a simmer and place the lid on the skillet for 30 minutes. Take off the lid and allow to simmer another 5 minutes to reduce the sauce. Serve over fluffy white rice and top with fresh parsley.
