Recipe Ingredients for cremini mushroom pasta w wilted arugula and goat cheese.

1 lb spaghetti
1 tbsp extra virgin olive oil
1 1/4 lb cremini mushrooms
1/2 tsp salt
4 cloves garlic
4 cups arugula
6 oz goat cheese
1/3 cup parsley

Recipe Directions for cremini mushroom pasta w wilted arugula and goat cheese.

  1. cook pasta. before draining keep 1/2c water. heat oil in skillet add mushorooms and salt and cook 2-3 min until soft. add garlic and cook 2-3 more minutes until liquid is almost evaporated. toss pasta w mushrooms, arugula and goat cheese. stir in reserved cooking liquid nutil cheese is creamy. toss in parsley- season w salt and pepper.
