Extremely easy and warming soup, add ginger for a kick!

Recipe Ingredients for Creci de Carrotte (Cream of carrot)

8 medium carrots, chopped
1 medium onion
1/3 cup white rice, uncooked
2 cups chicken broth
2 cups water
1 cup 1% milk
1 tablespoon olive oil

Recipe Directions for Creci de Carrotte (Cream of carrot)

  1. Chop the onions and the carrots in chunks.

  2. Heat up the oil in a medium-sized pot, brown the onions and carrots slightly.

  3. Add the chicken broth (I prepare from condensed - veggie broth works well too!) and the water, stir and cover.

  4. Bring to a boil on medium heat, add the rice.

  5. Simmer until the carrots are tender and remove from heat. Cool slightly.

  6. When soup is warm but not scalding, place in blender with some of the milk until all soup and all milk have been pureed to desired consistency.

  7. serve with cheese and crackers or fresh bread.
